Speedy salmon salad
I was at home the other day and really needed a quick, refreshing lunch. I grabbed out a frozen salmon fillet (plain) that we got the other day at Waitrose - responsibly farmed 4 Scottish salmon fillets (£6.99 but we managed to get them marked down). You simply put the fillet in its steam bag into the microwave for about 2 minutes 20 seconds (depending on your watts), and then leave for another 2 minutes, and there you have a delicious salmon fillet.
While the salmon was in the microwave, I threw together some rocket salad, chopped tomatoes and some sliced up goats cheese, which I then dressed with some balsamic and extra virgin olive oil. When the salmon was ready, I threw it on top, and put on maybe 1/2 tsp of harissa paste. I have a newfound love of all things spicy, and harissa is a great accompaniment to so many dishes - so far we've had harissa glazed halloumi, chicken and salmon - all delicious.
As far as a lunch that took 4 minutes 20 to make (including salmon resting time) this was pretty damn delicious. If your workmates don't mind the smell of salmon, you could easily make this at work with a little preparation in the morning.
